r: cleanup COVID-19, old onions, Windows

- I am not sure if the COVID-19 info pages even exist anymore.
- I have a separate repo (and submodule for onions)
- I have no supported Windows 11 installations and there is a broken
  one at family for months that no one has fixed or missed, so
  I don't need to store Windows images here. Fedora, Proton and SteamOS
  all the way!
